Trisket – Tri Tip Smoked like a Brisket

By: RACZ Barbeque and Grill

Rich for RACZ in Clevland, Ohio represented Team USA in the 2022 Grilling with Shine International Spice Off and introduced us to this incredible grilling technique to make tough old Tri Tip as tender and juicy as brisket using our Bull Shine Moonshine Infused Spice Off. Grab a chunk from your butcher and give it a try!

Ingredients

  • 3-5 pounds Tri-Tip (Santa Maria)
  • 1 cup Beef Tallow
  • 1/4 cup Bull Shine Moonshine Infused Steak Spice

Smoking a Tri-Tip, a.k.a. Santa Maria, low and slow just like a brisket. Not only is this a delicious recipe, but it’s a great way to learn how to smoke a brisket on the cheap.

So if you’re worried about ruining an expensive whole packer your first time out, start with the less expensive tri-tip cut for very similar results.

Step by Step Instructions

Step 1

Trim any hard fat and silver skin off of the tri-tip.

Inject the tri-tip with the beef tallow about an inch apart at every injection point.

Thoroughly cover the tri-tip with the beef Bull Shine Moonshine Infused Steak Spice on all sides.

Step 2

Preheat the smoker to 235F and place the tri-tip inside.

Smoke until the internal temperature reaches 160F,

Step 3

Remove the tri-tip from the grill and place it on a sheet of butcher’s paper.

Drizzle the tri-tip with the remaining beef tallow, and wrap tightly with butcher’s paper.

Place the wrapped tri-tip back into the smoker and let it cook until the internal temperature reaches about 198-200F

Step 4

Remove from the smoker and allow it to reset for at least 20 minutes.

Slice and enjoy!

Here’s what Rich from RACZ has to say…

“Tri Tip is a great chunk of beef to learn your brisket style of smoking. Grilled traditionally Tri Tip can come out to be a good slab of shoe leather, but this approach will have all your friends calling you the Grill Master… and when you add some of Sven and Troy’s Bull Shine you’ll have perfection!”
