Creamy Blackened SalmonĀ

Chef Barbi d. Keto say Rub me Arse is the perfect rub for anything Keto and she loves it on her Creamy Blackened Salmon with veggies.

Ingredients

Creamy Blackened Salmon

  • 3-4Ā Ā wild salmon filets
  • 1/2 cupĀ cherry tomatoes
  • 1/2 cupĀ moonshine
  • 1/4 cupĀ Rub me ArseĀ 
  • 1/2 cupĀ 10% cream
  • 1/2 cupĀ cream cheese
  • 1 cloveĀ garlic

  • 1/2 lbĀ Ā Brussel sprouts
  • 1 acorn squashĀ 
  • 1/8 cup butter
  • 2 tbspĀ Rub me Arse
  • 1Ā lime

Rub me Arse Creamy Blackened Salmon is a great way to make a nice meal for two or scale it up for the crowd… The blackened crust of the salmon adds flavour to the overall creamy sauce and if you add in the optional moonshine it explodes with a delectable taste.

Step by Step Instructions

Step 1

Wash and pat dry your salmon, splash a covering of moonshine and let dry for 10 minutes. Rub the salmon with a thick coat of Rub me Arse moonshine infused BBQ rub.

Step 2

Heat a 12″ cast iron fry pan to high with a splash of olive oil, salmon and fry for 5-10 minutes giving the salmon a crusty blackened coating. Remove the salmon from the pan and let rest on a plate and turn the heat down to medium.

Step 3

Crush garlic and brown for 2 minutes. Pour in moonshine (optional), cream, matoes and cream cheese, mix and stir for 5 minutes at medium.

Step 4

Add crusted salmon into the cream mixture and let cook for 15-20 minutes.

 

Step 5

Cut and dice squash and sprinkle in a few shakes of Rub me Arse. Trim Brussels sprouts and roll in olive oil and sprinkle with a few shakes of Rub me Arse. Heat up a 10″ cast iron fry pan with a butter and fry for 30 minutes.

Step 6

Remove all from the heat and plate and pair with a lovely glass of red wine. Enjoy!
